What is better than tacos?! Delicious homemade plant-based option I created for you. These yummy tacos are super easy to make, and a new spin on a traditional flavor with some butter beans is honestly just mouth-watering! ENJOY!
- 1 tbsp olive oil
- 2 x (14oz) tin butter beans
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/4 tsp chilli flakes
- 12 corn tortilla
- 4oz baby spinach
- 2 Lebanese cucumbers, diced
- 1/2 red onion, thinly sliced
- 11oz mango, cut into small cubes
Heat the olive oil in a large fry pan on medium heat, add the beans, cumin, paprika, oregano and chilli flakes. Cook, stirring continuously for about 5 minutes.
Heat the corn tortillas in the microwave for 40 seconds.
Top each tortilla with spinach, cucumber, red onion, mango and cooked beans.
