Mmmm, pizza...yes, please! But a healthy spin on pizza is even better! I am a huge fan of anything sweet potato, so I decided to impress you with my sweet tater skills on this one by combining my two favorite things into one recipe...and that is how the Pizza Jacket Potatoes recipe was born! YUM!
INGREDIENTS:
- 2 medium-large sweet potatoes
- 2 tsp olive oil
- 2 tbsp tomato paste
- 3.5oz cheddar cheese, grated
- 1/2 red onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 7oz black olives, pitted & sliced
- 1.7oz salami
- 2 tsp chilli flakes
Preheat oven to 200°C/400°F/gas 6 and line a baking tray with baking paper. Brush sweet potatoes with oil, wrap in aluminium foil and cook for 50-60 minutes.
Once potatoes are cooked, remove from the oven, unwrap and cut in half lengthways.
Top with cheese, onion, red bell pepper, olives, salami and chilli flakes.
Place back in the oven and cook for 15 minutes or until the cheese has melted and salami is crispy.
