Tomato Bisque

I have been all about soups and stews lately, and I don't even know why...my body just craves those light and delicious lunch options that digest quickly and do not bloat the belly! This clean version of Tomato Bisque is to die for, and the best part is you can use coconut heavy cream to make it dairy-free! It is literally packed with antioxidants and is incredibly alkalizing to the body! ENJOY! 

INGREDIENTS:

  • 2 tbsp olive oil
  • 3 sprigs spring onion, diced
  • 1 clove garlic, finely chopped
  • 1 carrot, chopped
  • 1 stalk celery, chopped
  • 1/2 tsp salt
  • 1/2 tsp cracked pepper
  • 1 tsp dried parsley
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1L vegetable stock
  • 28 ounces crushed tomatoes
  • 250ml heavy cream

Add the olive oil to a large saucepan over high heat. Add the spring onion and garlic and cook, stirring continuously for 3-4 minutes. Add the carrot and celery and cook for another 5 minutes.

Next, add the salt & cracked pepper, parsley, thyme, bay leaf, vegetable stock, and tomatoes. Reduce the heat and simmer for 30-40 minutes.

Transfer to a blender (or use a stick blender) and blitz until smooth.

Finally, stir through the cream.

Divide between 4 bowls and season with salt & cracked pepper.
