Chocolate Cherry Protein FroYo Cups

OMG, I cannot believe this is a clean dessert! It definitely tastes like heaven and makes me feel like I am having a little “cheat”. The most delicious #fixate inspired frozen dessert ever. Yes, you will lose your mind over this mouthwatering goodness! No-bake crust and just a few ingredients, super easy to make, and did I mention they taste like HEAVEN? Healthy protein rich alternative for a hot day or your go-to sweet-tooth fix!
Ingredients:

  • 3⁄4 cup raw cashews 
  • 3⁄4 cup pitted dates
  • 1⁄4 tsp sea salt (or Himalayan salt) 
  • 2 cups reduced fat (2%) plain Greek yogurt 
  • 1⁄4 cup raw honey 
  • 1 tsp pure vanilla extract 
  • 2 Tbsp unsweetened cocoa powder 
  • 2 scoops chocolate Vegan Protein 
  • 1 cup fresh (or unsweetened frozen) cherries, pitted

Prepare twelve muffin cups by lining with muffin papers. Place cashews, dates, and salt in food processor; pulse until a fine crumb forms. Divide cashew mixture evenly (approx. 1 Tbsp. + 11/2 tsp) into bottom of each muffin cup. Pack firmly. 

Combine yogurt, honey, extract, cocoa powder, and protein powder in food processor; process until well mixed. Add cherries; pulse until cherries are coarsely chopped. 

Fill each muffin cup to 1⁄4-inch below the rim with cherry mixture (approx. 2 to 3 Tbsp.). For garnish top each muffin cup with a cherry half! Freeze for 4 to 6 hours, or until solid. Enjoy!
