Egg Avocado Bakes

I love a little punch of omega-3’s for breakfast, and these to-die-for egg avocado bakes are totally on point! High on protein, fiber and fatty acids, heart healthy and low on sugar, these bakes are perfect for breakfast or mid afternoon snack. Paleo friendly option to spice up your morning routine! 
Ingredients:

  • 3 slightly ripe avocados 
  • 6 whole large organic eggs 
  • 3 stripes of turkey bacon 
  • salt and pepper to taste 

Preheat oven to 425. Slice avocado’s in half and scoop out about 2 table spoons from the center of each avocado. Make sure there is enough room for a large egg in each avocado for a snug fit. Place an egg in the center of each avocado and cover with turkey bacon strips. Sprinkle with salt and pepper to taste. Stick in the oven and bake for about 15-20 minutes or until eggs are set and cooked through. ENJOY!!!
