I have always been a “carbs” gal as long as I remember myself. Eating breads, pasta, pizza, bagels always seemed normal to me until I discovered how processed and “dead” those foods really were. Empty calories your body does not need and the main cause of “blood sugar spikes”, those “enemies” will never do your health a favor. In fact, all they do is make your brain receive a signal to store fat and not burn fat. So I started thinking of other ways of how to enjoy pizza “paleo” style, which is gluten-free and flour free. It is pretty simple and earthy delicious!
Pizza crust ingredients:
- 1 medium cauliflower head
- 1 organic whole egg
- 1 tsp organic minced garlic
- dry oregano, parsley, dill to taste
- sea salt and ground pepper to taste
Toppings ingredients:
- 2 Tsp organic tomato sause
- 1.5 shredded chicken breast
- 6 baby portabello mushrooms
- 1.5 bell peppers
- 1 tomato
- fresh basil to garnish
Start by cutting off cauliflower florets and placing them into a glass bowl. Use a high-power blender or a food processor to grind florets into a smooth mixture. Microwave on high for about 4-5 minutes. Cool the mixture and then use regular kitchen paper towels to suck all of the moisture out – it will take a lot of towels, but keep going and do not get discouraged.
Add a whole egg and minced garlic, mix together very well, then add all of the dry spices in, and mix together until smooth.
Place a piece of parchment paper on the baking sheet and lightly spray with Pam. Using hands push the mixture into the baking sheet making a pizza crust shape. I like making little edging as well, so that my toppings do not fall off. Bake pizza crust at 375 degrees for about 10-15 minutes or until golden brown. Spread tomato sauce on top of your freshly baked pizza crust. Cut up all veggies and sauté over medium heat until tender (leave tomatoes and fresh basil out). Place shredded chicken on top of your pizza crust first, and then add sautéed veggies on. Place cut up tomatoes on top and garnish with fresh basil. Bake for 5-7 more minutes. *I opted for no cheese option, but you are actually able to buy dairy-free cheese alternative and add that on top, if your heart desires. Enjoy this amazing guilt-free pizza! And believe me it tastes just as amazing as it looks! ENJOY!
