There is nothing better than having a little fun with a few ingredients to create something super delicious this Holiday season, right??!! I love this simple recipe that is full of flavors and takes less than 30 minutes to whip! Who doesn't love quiche? Well I am sharing my own spirit of Christmas with you this time and offering a healthier way to make a lovely comfort food dish that is lighter on calories...but still tastes DELICIOUS! Hope you enjoy it as much as I do, and please remember that dairy-free cheese is always an option here!
INGREDIENTS:
- 12 eggs
- 125ml milk
- Salt & cracked pepper
- 1/2 red bell pepper, diced
- 2 stalks spring onion, diced
- 3.5oz mozzarella, diced
INSTRUCTIONS:
Preheat oven to 180°C/350°F/gas 5. Grease a 12-case muffin tin with olive oil cooking spray.
In a medium-sized bowl, whisk together the eggs, milk, salt & cracked pepper.
Pour half the mixture into the egg cups (so they’re only half full).
Add bell pepper, spring onion and cheese to each one and then fill to the top with the extra egg mixture.
Place in the oven and cook for 15-17 minutes or until cooked through.
