Shrimp Fajitas

They are as DELICIOUS as they look, and you do not have to overpay at the restaurant! Now you can whip your own in no time & have the most incredible flavors too. I am using fresh ingredients and spices to give it the best aroma too, so you won't be disappointed! I love using Siete tortillas for mine personally, just because they are so incredibly clean, but you can choose whatever you prefer for yours. INGREDIENTS:

  • 1 Tablespoon vegetable oil
  • 50g sliced red or yellow bell peppers
  • 1 onion, sliced
  • 2 teaspoons chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 2 Tablespoons chopped cilantro
  • 1 pound large shrimp, peeled
  • lime wedges for serving
  • flour tortillas and fajita toppings of your choice
  • salt and pepper to taste

INSTRUCTIONS:

Heat the oil in a large pan over high heat.

Add the peppers and onion to the pan and cook, stirring occasionally, until vegetables are tender and charred on the edges. Season the vegetables with salt and pepper. 

In a small bowl, mix together the chill powder, garlic powder, smoked paprika, salt and pepper.

Add shrimp to the pan with vegetables and sprinkle the seasoning all over the shrimp and vegetables. Stir to combine.

Cook for 5 minutes, or until shrimp are pink. 

Sprinkle the cilantro over the top and serve. Garnish with lime wedges and flour tortillas and toppings on the side.
