Tuna & Quinoa Sushi

I am a huge sushi fan, but they have to be made just right! Some people are super freaked out to eat raw fish, so I am using canned tuna for this recipe in hopes some of you may try it! It is easy to make, flavors are there, and it is slightly on the lighter side. Yes, I am using quinoa and leaving your traditional rice out completely! This way it's easier to digest, enjoy and not feel stuffed after! It's a WINNER!

INGREDIENTS:

  • 1/2 cup quinoa
  • 4 x nori sheets
  • 1 avocado, sliced
  • 1/2 cucumber, sliced
  • 2 x 4.4oz tin tuna, drained
  • 2 tsp sesame seeds

Start by cooking quinoa according to packet instructions. Once cooked allow to fully cool.

Lay the nori sheets out on the bench and layer with quinoa, avocado, cucumber, tuna and sesame seeds.

Gently roll the sushi, once you get close to the edge, sprinkle a little water on the end of the nori sheet to help it stick.

Slice into bite-sized pieces or eat whole.
