Watermelon Salad

Spring is in the air...yes, I am talking fresh and mouth-watering flavors here! My watermelon salad screams SPRING/SUMMER, not to mention how incredibly delicious it is! Light, flavorful, and just so so yummy! ENJOY! 

INGREDIENTS:

  • 1.3lb watermelon, cut into cubes
  • 2 heirloom tomatoes, cut into cubes
  • 1 Continental cucumber, cut into cubes
  • 1/2 cup fresh mint, leaves torn
  • 65g feta, crumbled

For the dressing:

  • 2 tbsp honey
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • Pinch salt

To make the dressing, whisk together the honey, lime, olive oil and salt. Set aside.

In a large bowl, toss together the watermelon, tomato, cucumber and mint.

Drizzle dressing all over gently toss to combine. Finally, top with crumbled feta.
